FIANZ is made up of seven constituent regional associations. Each regional association selects representative(s) to the FIANZ Council. From within the Council an Executive Committee is formed, comprising of a President, two Vice-Presidents, a Secretary General, an Assistant Secretary General, a Treasurer and an Assistant Treasurer. The Council is also responsible for the appointment of Legal and Religious Advisors.
The Executive Committee is responsible for the administration of the FIANZ through its employees and volunteers.
Activities are split into ten broad working divisions with each working division implementing the policies formulated by the Council specific to their area of responsibility.
The working divisions are:

- National Affairs
- Trade & Development
- International Affairs
- Hilal & Religious
- Dawah
- Education & Development
- Halal Committee
- Investment & Funding
The members of the Council, the executive committee and the working divisions are staffed by unpaid voluntary workers.
The full Council meets at regular intervals, (a minimum of twice a year) to discuss current affairs, ongoing concerns and plan strategies for the future while the Executive Committee meet at regular intervals to discuss administrative issues and implement strategies approved by the Council.
FIANZ employ about five employees to manage, supervise and administer the halal meat certification programme. The duties include the certification of halal meat slaughter men, halal certification of food manufacturers' processing and plant operations and the operation of retail food outlets.
